Starch serves a critical role in the life of plants by acting as an energy reservoir. This polysaccharide is synthesized using glucose, the simple sugar that plants produce during photosynthesis. The glucose units in starch are linked together by alpha-glycosidic bonds, creating two types of molecules: amylose and amylopectin. Amylose is a straight, long chain of glucose, whereas amylopectin is branched, allowing for more accessible storage points of glucose.

When a plant synthesizes glucose in excess, the surplus is stored in the form of starch within various plant tissues, including seeds, tubers, and roots. For instance, the potato’s bulk is largely made up of starch grains that can be metabolized to fuel growth or seed germination. During periods of low photosynthetic activity, like at night or in the dormant season, plants can tap into these starch reserves and enzymatically break them down into glucose again to provide energy for essential functions, such as cellular maintenance and growth.

Contrary to starch, cellulose is the most abundant organic polymer on Earth, forming the critical structural component of plant cell walls. Cellulose is a fibrous substance made up of long chains of glucose like starch, but it has a different molecular configuration. Here, the glucose units are linked by beta-glycosidic bonds that result in a linear, unbranched structure.

These strong beta-linkages pave the way for hydrogen bonding between adjacent cellulose molecules, creating tight, insoluble fibers called microfibrils. Cellulose microfibrils bundle together to form the skeletal framework of plant cell walls, promoting rigidity, and resistance to external pressures. Thanks to cellulose, plants can grow upwards, resist gravitational pull, and uphold structural integrity under various environmental stresses. It's why trees can tower high, and blades of grass can spring back into place after being stepped on.

While both starch and cellulose are polymers of glucose, they differ profoundly in their functions and structures due to their distinctive chemical linkages. Starch, with its alpha-glycosidic bonds, is a storage form of energy that is easily broken down by enzymes in plants to release glucose when needed. The branching pattern of starch makes it soluble and digestible, not only for plants but also for animals, including humans.

On the other hand, cellulose, with its beta-glycosidic bonds, forms an indigestible fiber for most animals because the specific enzymes to cleave these bonds are uncommon. For plants, the role of cellulose is not for nutrient storage but to provide tensile strength and structural support. This chemical difference explains why we can digest the starch from a potato but cannot derive nutritional value from wood chips because of the cellulose content.
